🔥Thicc tomato soup for warm weather🔥
Inspired by my friends and the beautiful country of Spain
This is a take on the heavenly Cordovan soup known as salmorejo, but I’m not going to call it a salmorejo because I have been goofing around with it somewhat and I don’t want my Spanish friends to come after me with pitchforks.
As usual, we’ll get the ingredients and instructions out of the way, and only THEN will I tell you a story.
You will need:
— Three medium-sized tomatoes and a handful of cherry tomatoes. I’ll throw roma tomatoes in here, and I’ll even throw in kumatos if I feel like it.
— Three eggs
— A decent blender. I understand they can be expensive. But I am so happy with my Vitamix, that I have to point this out: Life’s too short for crappy blenders. (Btw, I got that Vitamix on sale)
