Ukrainian salo, which is a delicious slab of white pork fat, can be a controversial food. I mean, it’s right there in the description. Not a lot of people outside of Ukraine are immediately get excited about the word “slab.”
I have been a salo person for my entire life, with some of my earliest memories featuring buying salo with my stately paternal grandmother in Kyiv’s echoing Bessarabka, or Bessarabsky Market. The market is very trendy now, but back when I was a preschooler it was just a place to listen to adults haggling and pigeons cooing under the roof. My love affair with salo has survived these changes — and many other changes besides that.
